A Happy Day

Yesterday was my baby's 5th birthday.  Some of us thought that he should just go back to being 3 but he decided that he will be 5 now.  With all our food intolerances I thought that I will finally give this gluten free cake thing a try, well and if Jayden was going to turn 5 I might as well have some cake.The thing with gluten free is that the flours you have to buy  many different kinds and use a bit of each of them so it is time consuming.  So not only did we have a gluten free cake it also needed to be vegan.  So I began into this not sure that it was going to turn out at all and we started mixing it up and it started to look like a cake batter which was nice.  I was also on a time crunch so it had to work because I did not have time to do it again.  I am happy to say that I took it out of the pan too early and I melted my coconut oil for the icing, the cake was great.  Most of the kids just preferred to not know what it was they were eating but they liked it too.  Does not look that pretty but here we are blowing out the candles.
